To make the Lamb Sosaties, first cut the lamb up ito 25mm cubes, slice one onion into wedges (for the skewer - you could use shalotts) and the other chop finely, peel and crush the garlic. Heat the butter in a saucepan and saute the chopped onion, garlic and curry powder for a few minutes. Add the tumeric, lemon and meat stock, bring to the boil.
Add garlic, apricot slices, Sosaties spices, vinegar, 1/4 cup of water, and chilies (optional) to taste. Mix well. Cover. Bring to a boil. Cook over low heat for 10 minutes. Let it cool, then pour over the meat. Mix well. Let the meat marinate in the fridge for 2 to 24 hours. Preheat OVEN to 425°F.
Cut the meat into 2cm x 2cm cubes. Slice the pepper into even squares, also 2cm x 2cm. Blend the chutney, soya sauce and red wine. Add the fresh herbs, the garlic and the spices. . Add the meat and peppers to the marinade mixture and refrigerate for up to 12 hours. If you are using beef or lamb, you can shorten the time to 8 hours.
